Ingredients: ½ cup shredded carrots ½ cup shredded red cabbage ½ cup shredded green cabbage ¼ cup shredded leftover rotisserie chicken 1 tsp black sesame seeds 1 tsp Sriracha sauce 1 tbsp soy sauce Juice of half a lime 1 packet of any sugar substitute or 1 tsp of sugar Procedure: If you want to keep your vegetables a bit crisper, put all the vegetables, the chicken, and the sesame seeds into a Ziploc bag and place the ingredients for the sauce into a small container. Simply pour the sauce into the bag and give the whole thing a shake when you're ready! However, if you want a more slaw-like salad, go on ahead and mix everything together beforehand. Minestrone A hearty and comforting stew for a calm and relaxing lunch break This delicious and homey dish is made in the slow cooker, so simply put it on before you sleep. When you wake up, it's ready to be packed and taken with you to work! Ingredients: 1 diced carrot 1 chopped rib celery 1 chopped small- to medium-sized onion 1 minced clove of garlic 1 cup of low-sodium chicken broth 1 16 oz can of canned crushed tomatoes with the liquid included ½ cup cannellini or navy beans ½ cup small shell pasta or macaroni 1 tsp Italian seasoning salt and pepper to taste Procedure: Place all of the ingredients except the pasta in the slow cooker and cook on low for 4 – 6 hours.
